Cheesy Garlic Burgers with Lemon Zoodles

Ingredients:

  • 1lb ground beef
  • 5 cloves of garlic minced
  • 1/2 cup chopped parsley
  • 1 beef bullion cube that has been crumbled
  • 1 Tbsp steak seasoning
  • Crushed red pepper flakes
  • 4 medium zucchini thinly spiraled
  • 4 cheese slices (I used muenster)
  • 4 Tbsp butter
  • 1 Tbsp Sriracha
  • 1 tsp Italian seasoning
  • salt and pepper
  • Juice from half of lemon

Instructions:

  1. Wash and spiralize zucchini.
  2. Place zoodles into a colander and generously sprinkle with salt.
    *NOTE: Zucchini renders a lot of water when cooked, salt will help pull out excess moisture before cooking!*
  3. Rinse well to remove salt.
  4. Pour zoodles into a clean kitchen towel and squeeze out at much water as possible and set aside.
  5. Add ground beef to a mixing bowl and sprinkle with steak seasoning, red pepper flakes, salt and pepper, half of the minced garlic, bullion cube, and parsley. Mix to combine.
  6. Divide beef into 8 even portions and form into patties.
  7. Top half of the patties with a slice of cheese and add the other patties on top to make the “sandwich”.
  8. Melt 2 Tbsp of butter in a skillet over medium-high heat.
  9. Cook beef patties 5-6 minutes on each side depending on desired temperature.
  10. Baste the beef with butter and juices.
  11. In the same skillet melt the remaining 2 Tbsp of butter then add remaining garlic, lemon juice, sriracha, Italian seasoning, and red pepper flakes.
  12. Stir in parsley and add the Zoodles.
  13. Toss in the sauce for 2-3 minutes to soak up the juice.
  14. Add the burgers back into the skillet and heat back up for a minute or two.
  15. Serve immediately and enjoy!
