Keto Cinnamon Rolls

Ingredients:

Dough

  • 2 cups mozzarella cheese
  • 3 oz cream cheese cut into chunks
  • 1 cup almond flour
  • 1 tsp of baking powder
  • 1 tsp vanilla extract

Filling

  • 2 Tbsp melted butter
  • 2 Tbsp cinnamon
  • 3 Tbsp swerve or truvia brown sugar

Icing

  • 2 Tbsp cream cheese softened
  • 3 Tbsp heavy cream
  • 3 Tbsp swerve confectioners sugar

Instructions

  1. Preheat oven to 350°F
  2. In a microwave safe bowl add mozzarella cheese and cream cheese.
  3. Microwave for 1 min stir until smooth. If not completely melted microwave for another 20-30 seconds.
  4. Add almond flour, baking powder, and vanilla extract.
  5. Stir together until a dough forms. I use a dough attachment on my kitchen aid mixer, but you can use a spatula or your hands.
  6. Place dough on parchment paper and roll out into a rectangle.
  7. Brush dough with melted butter, cinnamon, and brown sugar.
  8. Roll dough into a log and chill for 10 minutes.
  9. Slice the log into equal pieces and add to a greased baking dish or pan.
  10. Cook for 20-25 minutes until lightly golden.
  11. Top with icing and enjoy!
