Ingredients:
- 1 stick of unsalted butter
- 1/2 yellow onion chopped
- 4 garlic cloves minced
- 4 large turnips peeled and diced into 1/4 in cubes
- 3 Tbsp salt and pepper
- 2 Tbsp garlic salt
- 2 Tbsp garlic powder
- 2 Tbsp onion powder
- 5 cups low sodium chicken broth
- 1/2 cup heavy cream
Toppings:
- 6 slices of bacon crumbles
- shredded cheese
- chives
- sour cream
Instructions:
- Melt the butter in a large pot or dutch oven.
- Add onion and garlic and Sautee for 3-5min until fragrant.
- Add in diced turnips and cook for another 3-5minutes.
- Pour in chicken broth and season with salt and pepper.
- Bring to a simmer, cover, and cook for 20min.
- Remove about 1/3 of the turnips and set to the side.
- Transfer soup into a blender or use an immersion blender to puree until smooth.
- Place the soup back into your pot and return the turnips back in.
- Add the rest of your seasoning and stir.
- Pour in heavy cream and heat back up to a simmer.
- Serve topped with sour cream, bacon crumbles, cheese, and chives.
