Loaded Turnip Soup

Ingredients:

  • 1 stick of unsalted butter
  • 1/2 yellow onion chopped
  • 4 garlic cloves minced
  • 4 large turnips peeled and diced into 1/4 in cubes
  • 3 Tbsp salt and pepper
  • 2 Tbsp garlic salt
  • 2 Tbsp garlic powder
  • 2 Tbsp onion powder
  • 5 cups low sodium chicken broth
  • 1/2 cup heavy cream

Toppings:

  • 6 slices of bacon crumbles
  • shredded cheese
  • chives
  • sour cream

Instructions:

  1. Melt the butter in a large pot or dutch oven.
  2. Add onion and garlic and Sautee for 3-5min until fragrant.
  3. Add in diced turnips and cook for another 3-5minutes.
  4. Pour in chicken broth and season with salt and pepper.
  5. Bring to a simmer, cover, and cook for 20min.
  6. Remove about 1/3 of the turnips and set to the side.
  7. Transfer soup into a blender or use an immersion blender to puree until smooth.
  8. Place the soup back into your pot and return the turnips back in.
  9. Add the rest of your seasoning and stir.
  10. Pour in heavy cream and heat back up to a simmer.
  11. Serve topped with sour cream, bacon crumbles, cheese, and chives.
