Ingredients:
- 3-4 skinless salmon fillet portions
- 1 Tbsp paprika
- 1 tsp truvia brown sugar substitute
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 2 Tbsp butter melted
- lemon wedges and parsley for garnish
Instructions:
- Place salmon on a plate and pat dry on both sides.
- Stir together all of the seasonings.
- Brush melted butter on both sides of the salmon.
- Sprinkle salmon with seasonings and lightly pat to make sure it sticks.
- Flip and season the other side.
- Heat a large cast iron skillet on medium heat.
- Add the salmon and cook 3-5 minutes without touching.
- Flip the salmon and cook for another 6 minutes, or until the fish is cooked through.
- If you are not sure when it is done the fish should be around 145° F and flake easily with a fork at its thickest part.
- Top with fresh parsley and lemon wedges.
I served mine with sautéed asparagus and butternut squash risotto that I found at Kroger. They also have a cauliflower risotto that is delicious as well!
