Breakfast Biscuits

Ingredients:

  • 4 oz cream cheese cut into chunks
  • 2 cups shredded mozzarella
  • 2 tsp baking powder
  • 3 eggs
  • 1 pkg ranch seasoning mix
  • 1 1/2 cups almond flour
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon chopped

Instructions:

  1. Preheat oven to 400°F.
  2. Place mozzarella cheese and cream cheese in a microwave safe bowl and microwave on high for 1 min. Stir until smooth.
  3. Add baking powder, eggs, ranch mix, and almond flour to cream cheese mixture and stir well.
  4. Stir in cheddar cheese and bacon.
  5. Spray a round pan or oven safe skillet with cooking spray.
  6. Divide dough into 12 balls and place in pan.
  7. Refrigerate for 10min.
  8. Remove from fridge and bake for 20-25 min.
  9. Top cooked biscuits with melted butter and chopped parsley if desired.

These biscuits are AMAZING! I cut them in half and made them into breakfast sandwiches. You can also freeze biscuits and reheat in microwave for 1-2min when ready to eat.
