Ingredients:
Dough
- 2 cups mozzarella cheese
- 3 oz cream cheese cut into chunks
- 1 cup almond flour
- 1 tsp of baking powder
- 1 tsp vanilla extract
Filling
- 2 Tbsp melted butter
- 2 Tbsp cinnamon
- 3 Tbsp swerve or truvia brown sugar
Icing
- 2 Tbsp cream cheese softened
- 3 Tbsp heavy cream
- 3 Tbsp swerve confectioners sugar
Instructions
- Preheat oven to 350°F
- In a microwave safe bowl add mozzarella cheese and cream cheese.
- Microwave for 1 min stir until smooth. If not completely melted microwave for another 20-30 seconds.
- Add almond flour, baking powder, and vanilla extract.
- Stir together until a dough forms. I use a dough attachment on my kitchen aid mixer, but you can use a spatula or your hands.
- Place dough on parchment paper and roll out into a rectangle.
- Brush dough with melted butter, cinnamon, and brown sugar.
- Roll dough into a log and chill for 10 minutes.
- Slice the log into equal pieces and add to a greased baking dish or pan.
- Cook for 20-25 minutes until lightly golden.
- Top with icing and enjoy!
