Ingredients:
- 2 lbs hot Jimmy Dean Sausage
- 1 stick of butter
- 1 yellow onion diced
- 4 cloves of minced garlic
- 64 fl. oz. of low sodium chicken broth
- 2 lbs of radishes washed and ends cut off
- 10 oz chopped spinach (fresh or frozen)
- 1 cup heavy whipping cream
- 6 slices of bacon cooked and chopped
- salt and pepper to taste
- crushed red pepper flakes
- parmesan cheese
Intstructions:
- Brown sausage with onion and garlic in butter in a large pot.
- Add chicken broth and bring to a boil.
- While waiting on the soup to boil cut radishes into thin slices or use a food processor to cut them into thin strips like hash browns.
- Once broth is boiling stir in radishes and spinach.
- Simmer until radishes are tender.
- Mix in heavy cream and bacon.
- Season with salt and pepper.
- Top with parmesan cheese and red pepper flakes. Enjoy!
*NOTE: This makes about 12 cups of soup. It freezes extremely well. Just place in the fridge 24hours prior to eating so it will thaw.
