Ingredients:
- 1 9in deep dish pie crust
- 1 large box of sugar free instant vanilla pudding
- 2 cups of milk
- 2 8oz container of sugar free cool whip, thawed
- 1 cup of flaked unsweetened coconut, toatsted
Instructions:
- Bake pie crust as instructed and let cool completely.
- Add pudding mix and milk into a bowl and mix with an electric mixer until thick.
- Fold in one 8oz container of cool whip and all but 1/4 cup of the toasted coconut.
- Pour filling into pie crust.
- Top with cool whip and remaining toasted coconut.
- Place in fridge and chill well before serving.
