Ingredients:
- 2 cups almond flour
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup stevia (or granulated sugar substitute of your choice)
- 1 1/2 tsp baking powder
- 1 Tbsp lemon juice
- zest from one lemon
- 2 tsp vanilla extract
- 1/2 cup blueberries
Instructions:
- Preheat oven to 350°F.
- Beat eggs with a hand mixer for a few minutes until frothy.
- Add in sour cream, lemon juice, lemon zest, and vanilla and mix well.
- Add almond flour, baking powder, and stevia.
- Mix until combined.
- Fold in blueberries.
- Fill 9 muffin cups and top with more blueberries.
- Bake for 20-25 minutes until golden brown.
