Blueberry Muffins

Ingredients:

  • 2 cups almond flour
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup stevia (or granulated sugar substitute of your choice)
  • 1 1/2 tsp baking powder
  • 1 Tbsp lemon juice
  • zest from one lemon
  • 2 tsp vanilla extract
  • 1/2 cup blueberries

Instructions:

  1. Preheat oven to 350°F.
  2. Beat eggs with a hand mixer for a few minutes until frothy.
  3. Add in sour cream, lemon juice, lemon zest, and vanilla and mix well.
  4. Add almond flour, baking powder, and stevia.
  5. Mix until combined.
  6. Fold in blueberries.
  7. Fill 9 muffin cups and top with more blueberries.
  8. Bake for 20-25 minutes until golden brown.

These were so fluffy and delicious!
