Cheesy Zoodle Spaghetti

Ingredients:

  • 1 lb ground beef
  • 1 Tbsp olive oil
  • 1 yellow onion diced
  • 2 garlic cloves minced
  • 2 tsp garlic powder
  • 2 tsp italian seasoning
  • 2 tsp salt
  • 2 tsp pepper
  • 2 oz cream cheese
  • 1 jar of low carb pasta sauce
  • 4 Tbsp tomato paste
  • 4 zucchini spiralized
  • mozzarella cheese
  • parmesan cheese

Instructions:

  1. Wash and spiralize zucchini.
  2. Put zoodles in a colander and heavily sprinkle with salt. Let sit for a few minutes then rinse well.
  3. Put zoodles in a clean kitchen towel and squeeze out as much liquid as possible.
  4. Set zoodles to the side.
  5. In a large skillet add your olive oil, onion, and garlic.
  6. Sautee for a few minutes and add ground beef.
  7. Season with salt and pepper to taste.
  8. Drain grease once beef is browned and return to skillet.
  9. Add tomato paste and cream cheese.
  10. Stir until incorporated well and melted.
  11. Mix in tomato sauce, garlic powder, salt and pepper, and itialian seasoning.
  12. Add zoodles and cover for a few minutes so the zoodles get soft.
  13. Remove cover and top with cheese.
  14. Broil on high until melted and bubbly.
